Chia
Chia Seeds have been consumed in Mexico and much of the rest of Latin America for centuries, and were a staple of the Aztec diet. They are a rich plant source of omega 3s, and are notorious as a healthy addition to a wide variety of foods in the US. When saturated in liquid they take on a gelatinous texture, and we use them not only as a topping for bowls but in an amazing chia "pudding" type bowl as well.
